There are many types of boxes suitable for portable power distribution. Any box with knockouts does not qualify. You could go with a plastic box, steel, aluminium, etc.

Easiest thing to do would be to use an outdoor rated box aluminium box with a gland style cable clamp from Home Depot and to plug all of the other threaded holes with the provided plugs. If water resistance is desired, use silicone on the threads of the plugs and select a water resistant style gland.

In picture 5, the outlet under the table was the original when we moved into the building - I would hope that is still grandfathered in because we didn't touch that circuit at all when we did our upgrades. That's on the same circuit as the outlets in the hallway to the back exit,  just the other side of that wall.
