Idk about any structural implications of knocking through the slab (there may be rebar in there that needs to stay connected?), but raised beds on wheels could maybe work..? Could possibly rig drainage from below the raised beds over to floor drains on west side of that room..? And have trees that are ok in shade of course :)

There is solid dirt just beneath that slab. You'd need something
without lateral roots, a good filter to keep rats & bugs from coming
up, and in general a much better maintained space than what we have
now.
