General
sudoroom has an active beer-brewing group. The mash is made off-site (due to a lack of out-door facilities at sudo room) and fermentation and bottling happens at sudoroom.

Have a look at the individual brews for more info.

*subiir 0 - fermentation started January 12th 2013.
*subiir 2
*Subiir 6 - fermentation started june 19th
*Subiir 7 - brewed july 10th
*Subiir 8 - Stout #1! Brewed November 30th, with Juul, Rios and Totum.

Projects
For anyone who wants to brew home brew beer, the materials and basic process are as follows. There is actually a large home-brew community and recipes so, anyone should check in with a basic google search to start: .

The rest is hardware and, there's some that is required for it. The main things are a vat which you can bring to a boil when you're stirring the ingredients, a syphon hose rubber tube, and a large tub with an air vent, that lets out the vent air as the sugar is transformed by yeast to alcohol. :) Finally, you will need a way to bottle the beer.

Automated brew system
Project to create an automated system to preheat mash and sparge water, carry out step mashing program, and alert operator of different manual steps such as adding hops.

System Components:

-ATMega 328p based controller

-DS1307 Real Time Clock

-DS18B20 Digital Temperature Sensors

-16x4 character LCD Screen

-4x Relay board for pumps and heating elements

-Serial connection for reprogramming

Possible add-ons:

-continuous hopping auger

-servo-controlled gas valve for boil stage

sudoroom has an active beer-brewing group. The mash is made off-site (due to a lack of out-door facilities at sudo room) and fermentation and bottling happens at sudoroom.

Have a look at the individual brews for more info.

* Made using found materials.
* Design encourages accessibility to those without capital or experience.
* Construction skills involve bending metal and cutting metal, without welding.
* All materials are found on the street, total cost zero.
* Replicability tested. After loss, was rebuilt in a day and made at https://www.noisebridge.net/

You will need:
* 1 large coffee can, paint can, or industrial-size fruit can.
* 1 regular size soup can
* small piece of metal, for the fuel shelf.
* large piece of metal, or interior can with less diameter than the outer canister.

Tools:
Necessary tools:
* vice grips or pliers to grab and bend metal (for bending metal experiments),
* something sharp: scissors, garden shears, knife, or pliers.

Steps:

1. Cut the bottom off of the soup can. You might use a can opener even, so long as you get the bottom off so that it is a hollow tube.

2. Cut an equal-sized hole in the bottom side of the large tin can. When busted open, this should fit the soup can inside it.

3. The fuel shelf is always the easiest for me to find. This is a narrow piece of metal which can usually be wedged into the soup can.

4. Insert the fuel shelf into the soup can. If needed, glue this in place.

5. The inner chamber can be made with a smaller can or an untreated piece of flat metal that's as wide as the coffee can is tall, and as long as you want. This piece of metal is bent into a small circle, which lets air vent directly upwards without any interfering wavelengths. It remains to be seen if the stove could still be effective without the inner chamber division.

6. Line up paper, and rest sticks on the tray. You are ready for ignition.

7. Spark the paper and the blaze will light the sticks. Because of the air intake, the fire can burn for a long time!

Use directions:

The Rocket Stove will burn cleanly for an extended period of time with only minimal twigs for fuel. The combustion is at the end of the sticks only, or the center of the chamber. Air enters from below the fuel intake rack, and is heated up and rises straight up to the bottom of the pot.

If you want to cook or boil water on the rocket stove, you will need to find a grate or screen to put over the top of the stove, and the diameter of your cooking pot must be less than the diameter of the stove. A pot skirt may be added, with a wider tube, in order to also heat the side of the pot. Generally, the more sticks you put in, the hotter. The sticks burn at the end, so you feed in more as you go. Using this method I was able to bring water to a boil very quickly. Try it!

Crunch, hack... Good luck!
Potential Properties to Pilot on
In CA, they are in south in the desert, one in Bay Area (Marin), a few in lake country, and some in modoc county.

Modoc, by alturas
*10 acres of farmland.
*reachable by public transit (greyhound to Redding, bus to alturas)
*Gets a few feet of snow in the winter
*Needs a well.

In Modoc national forest
*free campground nearby
*beautiful!

Tim would love for pople to be able to go there and stya as long as they want, but needs some sort of application process. Also, there are property taxes to pay - people staying would ideally pay them/tip in.

General
sudoroom has an active beer-brewing group. The mash is made off-site (due to a lack of out-door facilities at sudo room) and fermentation and bottling happens at sudoroom.

Have a look at the individual brews for more info.

See also: Sudomate

*subiir 0 - fermentation started January 12th 2013.
*subiir 2

:) Finally, you will need a way to bottle the beer.

subiir: The sudoroom collectively brewed beer.

Introduction
This is subiir 0, the first ever brewed.

It is an american pale ale with lots of hops.

Expected ethanol percentage is 4.5% to 5.1%.

This one was brewed with ingredients gotten from the Oak Barrel Winecraft homebrewing store in Berkeley and a few ingredients gotten for free from Craigslist. A more detailed list will follow.

The brewing equipment is in Juul's, Factotum's and Tunabanas' back yard in Oakland. It was designed for outdoor brewing (for minimal and easy cleanup), so is not suitable for brewing at sudoroom's current space.

Brewing method
The brewing method was all-grain "brewing in a bag" with a counter-flow chiller for post boil cool-down of the mash.

Ingredients
*Primary malt: About 12 pounds pre-ground pale ale malt from Oak Barrel winecraft
*Secondary malt: 2 pounds of mystery "specialty malts" free from Craigslist. Appeared lightly roasted.
*Bittering hops: ~20 grams Magnum at 14.5% alpha-acid.
*Flavouring hops: ~20 grams Cascade at 6.2% alpha-acid.
*Aroma hops: ~10 grams Glacier Hops 6% alpha-acid. Free from Craiglist. More than three years old.

Brewing equipment
*A converted turkey fryer.
*A lightly modified 100% ramie pillow cover from Ikea.
*A home-made counter-flow chiller (copper pipe in garden hose).
*Food-safe Home Depot HDPE buckets modified with spigots and airlocks.

Materials and food safety
*Food grade stainless steel.
*Unleaded drinking-water grade copper.
*NSF 51 food safe high temperature silicone tubing.
*100% non-dyed ramie cloth (though could the thread be another material?)
*Labeled-as-food-safe HDPE (only contacting mash/beer at low temperatures (< 30 C).

The sanitizing agent was: Iodofor.

People
Contact Juul, Factotum or Tunabananas if you want to learn more or join in the brewing project.

Carbonation
The following calculator worked really well for batch #1 (our second batch)
http://www.tastybrew.com/calculators/priming.html
For batch #3, we used 6.4oz of corn sugar (dextrose), translating into 181.5gs, equals 171.70 milliliters (ml / raw sugar)

Evaluation
*More light than intended. Less hoppy. Like a warm day for the beach beer.
**Was due to us adding hops at wrong time (too late) during mashing/boil?
*George loved it. Prebought for batch #2. But will likely be disappointed that batch #2 will be much more hoppy.

SudoMate Mk.5 debuted at the First Friday Event at Sudo Room, Oakland, CA.<br> The batch was created hours earlier by Ray Lai & Max Klein with help from Ari Kahn. A Rube Goldbergesque heat exchange was created to watercool the boiling hot mate in time for the event. <br>No one was burned in the making of the batch.
RECIPES ETC
*Vanilla extract makes for a really nice aroma. REALLY AWESOME TO HAVE! GETZ IT!
* Salt-lite, mix of potasium and sodium 50/50, is even better than salt. More electrolytes.

PROCESS, GEAR
* Bigger pot for main-batch - our keg is 5 gallons. Morten can bring the Subiir turkeyfrier for brewing for next time.
* More containers and things to pour from, into and through in general.
** Getting a big and fine strainer along with a corresponding funnel would be very awesome.
* It was a bit confusing that there were a lot of opinions on each batch. Making batches with separate master chefs worked really well to counter this.
** However, it was a bit messy with a lot of batches going on at once. Better space preparing and workflow would improve this greatly.
* A designated documenter made sure documentation was happening; it worked well that said documenter said ready by the keyboard, doing Just In Time documentation (ie. chefs would simply say numbers as they added, as it was all very experimental).

SudoBucket is an experiment in creating a cheap, simple, easily reusable, easily replicable (accessibility!) technology for growing mushrooms in, that addresses the challenges of growing mushrooms exclusively on (espresso) coffee grounds.
The project is run by User:Factotum and is a part of the Sudoshroom project.

Challenge
Espresso grounds pack too dense, thus not allowing sufficient airflow during incubation. This results in the mycelium populating very little of the substrate besides the surface and immediately "under".

Hypothesis
It is possible to use foodsafe non-substrate materials (ie. galvanized mesh, pipe) to prohibit the substrate from packing so dense, thereby making for a much more effective growing.
It is possible for this technology to be very easy and cheap/free to build anywhere in the world, using standard materials.
It is possible to build it in a way whereby it is reusable and easy to clean.

How it Works
Containers
The SudoBucket uses two containers that fit into each other (the interior and the exterior) and a lid. These two containers could be buckets of variying size (ie. 5 gallon or 2 gallon), yoghurt "buckets"/containers (american ones), tupperware, and probably lots of other things. The important point is that they fit into each other snugly, having a lid that fits, and that they are food safe.

The interior bucket has holes drilled into it. It is inserted into the exterior bucket. Inside the interior bucket, galvanized mesh (or another material) is used as a mechanism for prohibiting the dense packing, possibly in conjunction with a pipe with holes in placed in the center of the interior container (this pipe in case of bigger containers, ie. 5gl buckets).

The whole thing is sterilized, substrate and spawn is added, and lid is placed on interior container. Once substrate is fully populated (incubation is over), the exterior container is removed and the mycilia in the interior container is allowed to fruit through the holes of the container.

All of the thigns can be pulled apart and cleaned, sterilized and reused.

Iterations
0.1
Materials used: 2x 5 gallon buckets (1 from homedepot, 1 I found in a dumpster), 1x matching lid, 4in x 25ft 1/8inch galvanized mesh (brand Kwikmesh ~$10 in home depot), Pipe ---

Building process:
* Buckets: hole-saw to drill holes in interior bucket.
** Used 3 different diameters, as I'm curious if hole size matters.
** Also spaced them differently, to see what might be good spacing.
* Pipe:
** ... drill holes
* Mesh:
** Inserting. Spacing.
State of SudoShroom
*Some brief discussion was had at our First Annual State of the Room
*Matt has set up a bin for collecting coffee grinds in the common area kitchen.
*Many seem interested. Momentum!
*Evan suggests the name, Sudo Shroom!
*This wiki page was born.

As of 29th of January, 2013:
*Hol has brought a pump and mister.
*Morten will bring in the aquarium from Adeline that will be the host of our first growing station.
*Marina joins the group.
*The time for innoculating is near!

As of 5th of February, 2013:
*Morten has met with Farley's and they're in on giving us their espresso grounds. We can start a daily pickup (drop by at 9:30PM and pick up a bag full of it) when we're ready (and on the days where we cannot pick up / don't need more grounds, the fallback is that the grounds are composted).
*Aquarium is in place in sudo room.
*Our next step is to inoculate some spawn Hol has, into our substrate grounds. We will meet Tuesday 12th of February and set up + inoculate + go!

February 19th, 2013:\
*Alan from Tastebridge most generously allowed us to migrate the Tastebridge grow-gear to sudo room> a rack, a humidifier, an arduino controlled timer for humidifier, insulation mat. We picked it up the 18th of feb.
*We cleaned the aquarium brought in weeks earlier, and all the gear from tastebridge.
*Today (19th) we picked up our first grounds at farley. Good and dry espresso grounds, Morten found a few receipts and 1 salad leaf. But otherwise clean. Really good quality, dry. Around 6-7 KGs estimated.
*Hol brought a diluted spawn mixture> parts of an oyster mushroom grow kit, mixed with water and some other grounds, and some... other thing that would add some nutrients.
*We inoculated the farleys grounds in 2 milk-gallon containers and one 1.5L soda bottle (submerged in bleach & waterto clean), layering in the "Hol Spawn" with the grounds. Covered with ripped-open zip-lock plastic bags, allowed airflow in different ways (1 with holes in the plastic on the top, 1 with spacers creating flow channels, 1 with similar flow channels and holes by them). Placed the containers in the aquarium.
**Note> No nutrients nor water/humidity added. We will connect the humidifier tomorrow when the hose has been properly cleaned. Mortens sense is that it needs more humidity as the grounds were quite dry.

March ~10th, 2013:
*Morten and Hol set up the tastebridge-gear, and tweaked the arduino timer to run the humidifier one minute every hour.

March 30th, 2013:
*Batch #1 evaluated by Morten and Corey:
**The soda-bottle had some contamination (of the orangy-watery sort), and from Mortens memory had next to none 10 days before. Alas, it seemed to get some anaerobic contamination since then. Proceeding with fruiting it for the sake of seeing it grow, though shouldn\t be eaten due to risk of contaminants.
**The two gallon-milk-bottles were both slightly contaminated with both the orangy-watery type, and mold of blue-ish color. Morten took these to his compost to let them assist in that process.
**The big kombucha container was full-on contaminated. Might be because of bigger container/more densely packed/less spawn to substrate/got some contaminated subtrate? This was discarded with care, per the advice of Corey, as the contaminants might've been carrying unhealthy spores.
*Batch #2 started out!
**Cardboard (the innerparts) and ziplock bag style! 6 bags prepared in total.
***4 with pasteurized cardboard, 2 of which with spawn from our soda-bottle spawn, other 2 from grain-spawn of the strain "grey dove oyster".
***2 with non-pasteurized and dry cardboard, 1 with spawn from soda-bottle and 1 from grain spawn mentioned above.

What we need in the future
*Steady supply coffeegrounds (morten is setting up a deal with Farleys to take theirs)
*More containers for growing (aquariums, metal racks, thick plastic for "shielding", empty milk-gallon containers)

The Growing Process
<blockquote>[the] life cycle of mushroom is divided into two phases: vegetative and reproductive growth. Vegetative growth indicates linear growth of fungal mycelia dissolving complex substrate components into simpler molecules and absorbing them as nutrients. When low temperature, high humidity, much oxygen, and sometimes light are offered, the mycelia cease vegetative growth and begin to produce fruitbodies, which we call mushroom. This is reproductive growth. Mushroom cultivation can be said the practice of obtaining fruitbodies by artificially repeating these two growing stages.
Mushroom cultivation requires enough understanding on the optimal growing conditions of each mushroomspecies and how to make favorable environment for both vegetative and reproductive growth of mushrooms.
- from "Mushroom Growers Handbook, Oyster Mushroom Cultivation" </blockquote>

There are numerous ways to successfully grow oyster and shiitake mushrooms, all of which share the same basic steps and principles. This section aims to describe what one needs to set it all up and get started learning and producing - first with a quick rundown followed by more details on each point.

*Creating a growing environment; humidity is key, temperature seems important as well. It also needs to reduce the risk of contamination from alien bacteria.
*Getting spores (several methods: )
*Preparing the growing medium (several methods: ). Needs to be sterilized/pasteraurized.
*Inoculation of spores/spawn into the growing medium.
*Letting the substrate be populated by mycelia, while maintaining the right conditions.
*"Shocking" the vigorous mycelia into fruiting, basically by changing temperature and humidity for a shorter period of time, as to fool the mycelia into thinking that spring is here! Common method is called "cold flushing" (If not shocked, it is possible to store the populated substrate in "hibernation", as a kit).
*Maintaining conditions for growth in the growing environment (several methods: )

Growing environment
*Aquarium
*Empty milk-gallon container
*Rack with plastic
*ShroomBucket

<blockquote>The last important factor for mushroom growing is providing an appropriate environment both for vegetative andreproductive growth. Not being protected by a skin layer, fungi are easily affected by their growing conditions. Soit can be said that the success or failure of mushroom cultivation depends on the control of growing conditions.Environmental factors affecting mushroom cultivation include temperature, humidity, light and ventilation.Optimal levels of them at vegetative stage differ from those at reproductive stage.
- Mushworld, Oyster Mushroom Cultivation</blockquote>

Getting spores
*Alufoil method
*?

Growing mediums
Coffee grounds
Morten contacted Rikke from Tastebridge about coffeegrounds preparation. Here's what she said:
<blockquote>From the few images I posted to Google+ at the time, it looks as though the pressured cooked, non-supplemented batch did best, i.e. colonized the medium fastest (which is good, because faster colonization means lower risk of contamination by bacterial and other fungal competitors).</blockquote>

Sawdust
Straw
Most Important things for a Project
# Pitch video
#* Depends on what you're doing, but it needs to be clean.
#* "Cool" cause buzz, maybe viral marketing. Present images of the kind of thing going on.
#** We host events, doing things that would show up in the space.
# Media ready, e.g. photos, logos, external website, social media, press release, blog roll.
#* Work the connections, reddit, techcrunch, boingboing, gizmodo.
# Setting a goal, and an accurate budget. More about being clear.
#* If you reach your goal, you're likely to exceed it 31%, shoot a bit lower!
# People need to like your cause, they can be involved and feel like they supported something substantial.
# Need some seeders, even encouraged!
# Gauge your goals based on your network, and how big it is.
#* Build heuristics for how much you can get (e.g. $40 / person).
#* Average is $75
# Need to have good perks (read ideas below)
#* $25, $100 are the most important price points, in that order.
# Keep posting media after campaign launches --> you earn 81% more money!
# If you're working with a team, you raise 80% more money.

Perk Ideas
* Sponsor a square-foot-month (actually write their names on the square feet)!
** e.g. $25 gets you a 1 sq. ft. for 6 mo.
* Groups using the space for meetings, a big amount!

Links
* http://kickstarter.com/
* http://indiegogo.com/

Fundraising
The main concept here is to get the word out, publicize, find opportunities for major support, while also bringing in a bit of money for the space. Should be fun, fairly easy, valuable to supporters and above all: do-able.

Item Ideas
* Some useful little gadget
* Stickers
** "Hacking is Not a Crime"
** "This Machine Kills Fascists"
** Official seal / support sticker (e.g. like "police support" stickers that get you out of traffic tickets)

Service Ideas
* Some sort of web hosting / application service.
* Something cute like a "free consultation"
* Personalize services to a range of skills members have.

Other
* General Business Development notes from Len
* from a business standpoint there are two different funding mechanisms at play here: one is internal funding, the other is coming from external sources. You can also look at things as "products" or "not products" the technology may or may not be there. Examine the who / what / where / when / why, and the time / effort involved. examining this will rule most of the options in the brainstorm out.

subiir: The sudoroom collectively brewed beer.

Learnings
What we are learning from time to time

From of Batch #1, #2 and #3

What we are learning from time to time

From of Batch #1, #2 and #3
RECIPES ETC
*Vanilla extract makes for a really nice aroma. REALLY AWESOME TO HAVE! GETZ IT!
* Salt-lite, mix of potasium and sodium 50/50, is even better than salt. More electrolytes.

PROCESS, GEAR
* More containers and things to pour from, into and through in general.
** Getting a big and fine strainer along with a corresponding funnel would be very awesome.
* Making batches with separate master chefs worked really well!
* A designated documenter made sure documentation was happening; it worked well that said documenter said ready by the keyboard, doing Just In Time documentation (ie. chefs would simply say numbers as they added, as it was all very experimental).

Meeting
*Tuesday 16th April 7pm at Sudo
**Batch1
**Batch2
**Batch3
