I love Jake's, uhm, creative and practical ideas!

If you have 2.5kVA, that means that you draw about 12A. So the 24V
transformer should be able to deal with about 12A current.
Then put the output in series with the 240V output. If the sum
measures 264V, turn the polarity to get 216V.
