Hey,
Is there any way that we can open up POP3 or IMAP on the peoplesopen.net
mail server? I'd like to not have to check email over a web page if
possible. If it's already set up can you let me know the appropriate
incoming and outgoing hostnames?

IMAP/SMTP are already available, but the address of the mail server is
mail.peoplesopen.network. (IMAP: 993, SSL or TLS; SMTP: 587, STARTTLS
always/required)
So: peoplesopen.*NETWORK* not peoplesopen.*NET*
