Your guess is correct. You see "From: Eric O'Connor
<eric(a)oco.nnor.org>" because it's sent directly to you.
Most lists I've been on preserve the original
sender in the "From:" header and put the list address in "Reply-to:",
which I think makes most sense. But I'm noob at mailing list administration.
We cannot do that. It would violate DMARC. Until recently, the major
mxs accepted DMARC violations, but they don't anymore.
