Actually, the voice on that video sounded like Glen Fitton from CCL, who is
gearing up to do a series of workshops on genetic engineering plants
using CRISPR - I've cc'd him on here.
Not sure about any textbook, but the software he was showing is benchling,
a common design tool for genetic engineering:

Sorta like a software development platform, except the software here is DNA
and amino acid sequences. It's what we use for our Open Insulin project,
Real Vegan Cheese, Kombucha Genomics, and more.
