Not sure about any textbook, but the software he was showing is benchling, a common design tool for genetic engineering: https://www.benchling.com/ Sorta like a software development platform, except the software here is DNA and amino acid sequences. It's what we use for our Open Insulin project, Real Vegan Cheese, Kombucha Genomics, and more.
