+1 on getting a keg if you'll be making (and carbonating) a couple gallons
at a time! And yes, a keg would definitely come in handy for beermaking as
well.
For Mate, consider using Stevia or xylitol as diabetes and tooth-friendly
alternatives. That will also cut down on the risk of exploding bottles due
to spontaneous fermentation...

+1 on getting some sudo corny kegs as it would also help subiir by
obviating the need to sanitize bottles. also corny kegs are much, much
easier to clean than sankey kegs. i'm trying to get a CO2 tank right now
but it will probably wind up living in a metalshop somewhere...

certified food prep space, etc. Giving away beverages and accepting

You will never get truly
sterile, just sanitary, storage and anything with lots of sugar will
ferment. It is what nature does with sugar. Then you get sulfur-y,
boozy mate...
